Owner Tim Hill is a brilliant, knowledgeable host and has achieved something amazing, from the first vine plantings in 2018/19 to some superb wines today. Growing at 800ft above sea level presents its challenges but the results are dry, crisp quintessential English wines, perfect for pairing with cured meats and hot smoked classics.

Only considered native to the South of England and thought to be introduced some 4,000 years BC, this Beech tree is probably around 200 years old and growing in the wild could have a life span of 350 years.

We don’t source our smoking chips and dust from these wonderful ancient trees but from managed renewable resources elsewhere in Europe.

Beech is a special smoking wood, producing a wonderful subtle smoke flavour with a slight nuttiness, perfect for lighter meats, fish and vegetables.
