CREATING COLD SMOKE
Cold smoking temperatures need to be below 20 degrees C to seal rather than cook food. So how do you create cooled smoke by burning wood, without also creating heat? The solution is the Cold Smoke Generator by ProQ, a small mesh maze device which when filled with a fine wood dust and lit from an outer corner will gently deliver aromatic wood smoke flavour for around 10 hours from one fill.
