Hickory has a strong but wonderfully mellow smoke flavour which is perfect for a full smoky flavour in bacon, cured meats, charcuterie and oily fish such as salmon and herring. Try with nuts, chillis and dried fruits as well as strong cheeses. The dust is mix of pale and dark tones and the particle size tends to be larger wood flakes of around 3mm in size, though as a natural product, batches can vary.
Mix this larger particle dust with a finer variety such as maple or oak for use in the ProQ Cold Smoke Generator and other slow smoulder cold smokers, to help promote even smouldering. It is suitable for stainless steel tray style smokers such as the Camerons.
Pack size is approximately 500g giving you 50 hours of cold smoking in a ProQ generator. Packaged in sealed cellophane bags. Reseal bags after use, store in a cool dry place and your wood dust will deliver great results for up to 2 years.
