Our maple wood dust delivers a mellow, rich, medium strength smoke flavour with a slight sweetness which is highly versatile for a wide range of foods, but particularly complements fattier meats such as pork, bacon and charcuterie and oiler fish such as salmon and herring. The wood is a light, pale colour and the dust consistency is fine and dense.
This fine dust is a perfect particle size for reliable smouldering in the ProQ Cold Smoke Generator and other slow smoulder cold smokers which can be used in a regular BBQ or any ventilated smoking compartment. It is also suitable for stainless steel tray style smokers such as the Camerons.
Pack size is approximately 500g giving you 50 hours of cold smoking in a ProQ generator. Packaged in sealed cellophane bags. Reseal bags after use, store in a cool dry place and your wood dust will deliver great results for up to 2 years.
