This is a complete home kit to enable you to both cure and cold smoke salmon, or any other fish. Included is pure coarse sea salt, a blend of spices, the ProQ Cold Smoke Generator and two wood smoking flavours with enough wood for 40 smoking hours.

  • Crush the spices and mix along with some sugar with the salt for a curing mix.
  • Follow the step by step instructions. Adapt for other fish or spice flavours
  • Choose a wood dust flavour and fill the Cold Smoke Generator

Our Smoked Salmon Kit includes everything you need to cure and smoke salmon, or any other fish, at home. You'll find that home cured and smoked salmon is a distinct cut above shop bought smoked salmon. The kit enables you to experiment with cures and smoke flavours and this is a great home project which will take just a couple of days to complete.

The kit includes:

  • 1kg pure coarse sea salt
  • 50g spice blend of dill, coriander and star anise
  • ProQ cold smoke generator
  • 200g beech smoking dust
  • 200g whisky oak smoking dust
  • Step by step guide

The two wood smoke flavours give you a choice of a subtle smoke from the beech or a more robust smoke flavour with an extra alcoholic kick from the whisky oak. The beech will also suit lighter fish flavours such as trout whilst the whisky oak would suit a stronger fish such as mackerel. The combined volume of dust equates to 40 hours of cold smoking which should give you enough for multiple cold smoking projects. Just 100g of dust is required to produce 10 hours of cold smoke.

The cold smoke generator can be used in a regular bbq, smoker or any homemade smoking compartment. All you need is a ventilated space from base to lid. The generator can be used again and again for a wide range of cold smoking projects.

The kit is packaged in a gift box and makes an excellent gift for the curious foodie.

The ProQ Cold Smoke Generator - 15cm square stainless steel square coil with fine mesh sides. Includes a tealight. Cleaning instructions: dishwasher safe and also gently brush the mesh to avoid a tarry build-up - an old toothbrush is ideal for this task.

Our wood smoking dust is 100% natural hardwood ground to a fine consistency and produced specifically for food smoking and sourced from sustainable and managed forest systems in Germany. Packaging in recyclable cellophane bags. Please note: The wood consistency is a factor when using the cold smoke generator and we recommend a fine dust rather than a larger rice sized product, also classified as 'dust'. .
