This hot and cold smoker set is all you need to get started for a complete food smoking repertoire. Just add a good quality charcoal briquette for hot smoking and a cure mix for cold smoking meats and fish. This is the very latest ProQ Excel Elite 2018, ProQ's biggest and best food smoker with a host of new features for even better functionality - see list below. The smoker has fantastic versality with its large capacity, 4 part construction and multiple cooking options along with top notch build quality and excellent heat retention properties.

Included with this smoker set is the ProQ Cold Smoke Generator and two packs of wood products, dust for cold smoking and chips for hot smoking (usually oak dust and cherry chips) as well as our Hot Smoked 24 page recipe, tips & techniques booklet covering both hot and cold smoking recipes. As well as hot or cold smoking, you can also roast, steam and barbecue with this versatile smoker. You can also buy extra stackers to increase the cooking capacity.

This new 2018 ProQ smoker design includes the following new features:

  • Thicker charcoal basket construction with added bracket to house the innovative ProQ Flip'nGrate, a grill cage which can be rotated (available separately see ProQ accessories)
  • Redesigned inspection doors for improved fit and seal
  • New 'cool touch' silicon coated inspection door handles
  • Larger easier to read temperature gauge with enlarged bezel
  • Hanging hooks for the lid bar are now angled at 90 degrees to improve capacity
  • Redesigned threaded leg and grill brackets for quicker leg assembly
  • Thicker vent material for improved seal
  • Cool touch silicon coating on vent tabs
  • In addition, the ProQ has all stainless steel fittings from latches to internal brackets to grill racks.
  • The Excel has a 50cm diameter grill rack and 1.2m height and is the roomiest in the ProQ range.
  • The ProQ cold smoke generator will deliver aromatic cold smoke for approximately 10 hours from one burn of 100g of wood dust.

The modular design means you can tailor the smoker capacity according to the cooking task in hand. Remove one stacker or smoking compartment if you only need to use a single grill rack area, remove both to create a portable kettle barbecue, or retain both stackers for larger projects. Us the fish and meat hanger with 5 butcher's hooks and remove the grill racks to create a large hanging area for sides of salmon or other whole fish.

When hot smoking the heat source is from a charcoal fire which sits in a basket in the base. The base has three windmill vents which provides great heat control. The water pan sits directly above the charcoal to both suppress the direct heat and infuse moisture into the cooking process. Wood chips are placed on the charcoal where they gently smoulder and create aromatic wood smoke flavour. Cold smoke by replacing the charcoal fire with the ProQ Cold Smoke Generator which sits in the charcoal pan. Fill with just 100g of wood dust, light from one corner and allow to smoulder. It will gently burn for approximately 10 hours producing wonderful wood smoke without the heat, perfect for cold smoking conditions.

Your Hot and Cold Smoker Set includes a 500g bag of wood smoking chip for hot smoking and a 500g of wood smoking dust for cold smoking, in a selection of different hardwood and fruitwood flavours, both strong and mild, to suit most recipes. The woods are packed into kraft bags with twine tie.
