This is a great starter kit for an introduction to cold smoking and an all-rounder for any cold smoking recipe ideas which can be used again and again. The kit includes the ProQ Cold Smoke Generator which creates 10 hours of cold smoke from just 100g of fine wood dust plus a selection of wood dust which will deliver around 60 hours smoking time in total.

The 15cm square mesh maze is designed to allow just enough air to fuel smouldering wood dust so that it burns extremely slowly and without the build up of heat, creating cooled aromatic wood smoke for a range of cold smoking projects in which food is sealed and flavoured with wood smoke but not cooked.

Use in a covered bbq, dedicated smoker, homemade smoker or take a cost-effective short-cut and use with the Eco Cold Smoker which is only £28 - see separate entry. The generator is made of stainless steel and is supplied with a tealight. This is placed at an outer corner of the maze and 100g wood dust loaded into the mesh tray, leaving the channel dividers clear of the wood, so the smouldering won't jump tracks. The tealight is lit underneath a ramp of wood dust and once the dust is lit, the tealight should be removed and extinguished.

The generator works best with a fine particle wood dust and we've supplied a selection of three different flavours, usually oak, maple and beech although we may substitute flavours for something very similar depending on availability. Oak delivers a robust smoke flavour ideal for bacon and oily fish as well as some cheeses, maple has a rich, mellow flavour which will work well with bacon and other smoked charcuterie and beech is a light, subtle flavour ideal for more delicate foods but also surprising good with fish.

For future uses, we offer a great range of wood dust flavours plus information on those which are a finer particle and work best with the generator, these include whisky oak, maple and cabernet oak. Other larger sized dusts such as hickory, cherry, apple and alder will work less well due to the larger particles, however, batches can vary considerably.

Also included in the pack is the Hot Smoked Recipe Booklet, 24 pages of hot and cold smoking recipes with easy to follow instructions and great colour images. Cold smoking recipes include bacon, pancetta, salmon, duck, cheeses and cold smoked larder staples such as salt and garlic.

Cleaning Tips:

The ProQ Cold Smoke Generator is dishwasher safe, but also benefits from gentle brushing on the fine mesh work to remove resinous deposits. An old toothbrush or soft nailbrush is ideal for this task.
