Manuka brings the rich, mellow flavours of New Zealand to your smoker or barbecue. These mini chips sized between 4 and 8mm are ideal for a range of hot smoking projects. The wood has a dense grain and will produce a complex smoke flavour which will work with a wide range of food types.

Direct from New Zealand, these Manuka chips are widely used as a staple food smoking flavour in New Zealand, but rarely found over here in the UK. The Manuka tree is found throughout South America, China and the Pacific Islands as well as New Zealand and it thrives on shrub land with infertile and poorly drained soils. A member of the Myrtle family, Manuka is know for its antibacterial and fungicidal properties. Manuka honey is particularly famous for its high levels of the antibacterial compound, Methylglyoxal and the indigenous Maori population chewed young shoots or tea made from the seed capsules to cure stomach and urinary ailments.

These properties are not necessarily present in the wood itself, which is dark reddish brown in colour, with a dense grain and very tough as a result, so was widely used in the production of tools from paddles to weapons by the Maori. Today it is commonly in use as a bbq fuel and smoke flavour.

These finely milled chips are roughly 4mm - 8mm in size. They are suitable for any hot smoking projects. Use directly on your heat source using a stainless steel smoker box or foil pouch and soak for a short time to aid more mellow smoke production. They can be used for cold smoking depending on the kit you are using.

They are not ideally suited for use in the ProQ Cold Smoke Generators because of their larger size, however, could be used as an accent flavour by scattering over a milder flavour fill such as beech.
