Densely grained vine chunks produced from air dried aged vines from the vast wine growing region of Languedoc Roussillon in the South of France. The chunks are from vines which have reached the end of their productive life and are removed for replanting. They provide a rich fruity flavour for red meats, game and poultry.

These aged vine chunks are from the Languedoc Roussillon region deep in the South of France and are from a range of grape varieties grown there including famous reds such as Syrah and Cabernet and whites such as Sauvignon and Pinot. This particular region accounts for a quarter of the wine produced in France and is known as the patchwork because of the number of different grape varieties grown and the blends they produce.

The beautifully grained and gnarled chunks are made from vines which have reached the end of their productive cycle of between 20 and 40 years and are routed out to be replaced by young vine plants, a natural process in wine cultivation.

The vines are stacked and air dried to promote maximum air circulation and prevent moulds or insects taking hold. They deliver a rich and fruity smoke flavour from a dense smoke. The redundant vines have been used for centuries as both a fuel and flavour in outdoor cooking. Team with red meats, game, lamb and poultry.
