We've bundled together the new ProQ Ranger Elite hot smoker with the ProQ Cold Smoke Generator, two types of wood smoking product along with our tips and techniques and recipe ideas for both hot and cold smoked dishes. Its all you need to get started with either smoking technique aside from a good quality charcoal briquette for hot smoking and a cure mix for cold smoking meats and fish. Just the job for the adventurous outdoor cooking foodie.

The ProQ Ranger Elite is just the right size for cooking a range of foods standing just under a metre in height and with a 37cm diameter. As one of a new range of Elite ProQ smokers, it offers a host of new features including thicker steel, all stainless steel fittings and silicon temperature probe eyelets. This 3 in 1 smoker gives you a range of cooking techniques including hot smoking, steaming, roasting, grilling, stir frying and, with the ProQ Cold Smoke Generator, cold smoking. The modular design means you can tailor the smoker capacity according to the cooking task in hand. Remove one stacker or smoking compartment if you only need to use a single grill rack area, remove both to create a portable kettle barbecue, or retain both stackers for larger projects. The Ranger also includes a fish and meat hanger, just remove the grill racks to create a roomy hanging area and the wok shaped water pan doubles as a stir fry pan.

When hot smoking the heat source is from a charcoal fire which sits in a basket in the base. The base has three windmill vents which provides great heat control. The water pan sits directly above the charcoal to both suppress the direct heat and infuse moisture into the cooking process. Wood chips are placed on the charcoal where they gently smoulder and create aromatic wood smoke flavour. Cold smoke by placing the ProQ Cold Smoke Generator in the charcoal pan, filling with wood dust, lighting it from one corner and allowing it to smoulder. It will burn for approximately 10 hours producing wonderful wood smoke without the heat, perfect for cold smoking conditions.

This smoker set will allow you to create amazing hot smoked dishes such as marinaded pork loin, whole smoked chicken, hot smoked mackerel as well as cold smoked recipes such as smoked cheeses, smoked salmon and pancetta rolls.
