It's particularly good with cuts and fillets of meat as the larger crystals have a slower though powerful curing action. Buy natural coarse sea salt in a 10kg bulk quantity. These coarse sea salt crystals are completely pure and produced using natural processes in Israel - the salt is hand-harvested and dried in the sun rather than mechanically extracted and refined as with industrial salts and as such it qualifies for Soil Association organic status.

> Coarse sea salt is ideal for dry curing projects for cold smoking but is also ideal as a general seasoning or condiment as well as using in dry rubs and marinades for hot smoking. When used as a dry cure, the coarse grains are most suitable for smaller cuts of meat or for curing recipes which require larger joints of meat to be placed on a bed of salts whilst curing with fine sea salt. The larger grains have a slower curing action so should not be used for large hams or other joints of meat, try our 10kg packs of fine salt for these projects. You can add your own twist to a dry cure mix with herbs, spices and sugars for different flavour results.
