This pure Alder dust produces a delicate smoke flavour which works particularly well with fish and seafood – it is most famous for the ‘smoke’ in Atlantic smoked salmon. It’s a lovely smoke flavour which works with many other foods including vegetables, fruits and garlic. Light and fluffy in texture, the particle size is made up of mini wood shards between 1 and 3mm in size.
Alder usually works well with the ProQ Cold Smoke Generator and other slow smoulder cold smokers, though batches can vary. It is suitable for stainless steel tray style smokers such as the Camerons.
Pack size is approximately 500g giving you 50 hours of cold smoking in a ProQ generator. Packaged in sealed cellophane bags. Reseal bags after use, store in a cool dry place and your wood dust will deliver great results for up to 2 years.
