A bundle of dried Pimento leaves, still on their twiggy branches, some still 'in the green'. Sourced from Jamaica from the Pimento or Allspice tree which only grows in the Caribbean, the leaves together with Pimento sticks are a key ingredient in the production of jerk chicken.

Pimento wood and leaves are a key ingredient in the production of the Jamaican classic dish, jerk chicken, produced from the Allspice or Pimento tree which is indigenous to the Caribbean Islands. The leaves are used as a bed on top of a rack of soaked Pimento sticks in an offset grilling position on bbq or smoker. Whole sticks and cut sticks are also available separately.

Marinaded chicken or other meats, seasoned with Allspice which is made from pimento berries, is then placed on the Pimento stick and leaf layer and cooked slowly. Both leaves and sticks should first be soaked for around 20 minutes. If you cook particularly low and slow, the sticks can be reused, however, the leaves will need to be replaced for a new cooking session.

The Pimento tree is an evergreen tree related to the Bay and Clove family. The unripe berries are used to create classic Allspice which has a distinctive flavour combination of cloves, nutmeg, cinnamon and pepper.

Our pimento products have full export certification from the Jamaican Government. They have been heat treated to comply with import requirements. No chemicals have been used in their production.
