HOW IT WORKS
Ceramic grills work very efficiently, needing little energy to generate and maintain the desired temperature and reach staggering temperature variations from hot and furious to low and slow. Just 3kg of lumpwood charcoal will provide a low temperature heat source for up to 24 hours, great for those long, slow hot smoked or roasted dishes. The rate of use of charcoal is between 25 and 50% less than a traditional grill or barbecue.
The combination of the latest ceramic construction and the low levels of air movement in the grill area means that food will not dry out and will remain tender and succulent. At the other end of the cooking scale, the Monolith can very quickly achieve high temperatures within around 15 minutes for grilling and searing simply by increasing the air flow.
The ceramic acts to contain the heat, so the external temperature will not reach levels where it can cause burns, so this would be a great addition to a family outdoor cooking area. Constructed in extremely heat resistant ceramics and high-grade stainless steel, the Monolith has a robust, high quality build. The side tables are made of solid bamboo and the stand is powder coated stainless steel. Given the 90kg weight of the Monolith Classic, the stand provides a much easier way to move the grill around and its lockable castors will secure it in place. The grill is also available in a 'standalone' version without the cart, ideal for slotting into an outdoor kitchen or for use in a commercial kitchen.
COOKING OPTIONS & CONFIGURATIONS
Barbecue/Grilling - Place grill rack on the fire ring directly above the hot coals. Turn food to ensure even cooking Indirect
Grilling/Roasting - Place deflector stone on fire ring to protect food from direct heat. Raise the grill rack on the grill stand or 'distance piece'. Cook larger items including joints of meat and whole fish or poultry more gently over lower temperatures.
Hot Smoking - Establish the coals and then close the air regulator to minimise the air intake. Either add wood chips, chunks or spice mixes directly to the heat source or use chips via the Smoking Chips Feeder function to flavour your food with wood smoke whilst slow cooking. The feeder makes adding chips to your coals a much simpler process, delivering them to the heart of your heat source rather than having to remove deflectors and grill racks to access the fire with the subsequent loss of cooking time and heat. Monolith is the only ceramic grill to feature this innovation.
Pizza and Baking - Place the grill stand on the fire ring and the pizza stone on the grill stand. Preheat to temperatures of between 300 and 350 degrees C and cook authentic stone baked pizza or traditional breads.

We recommend a restaurant grade lumpwood charcoal for use in your Monolith. Monolith's own brand is perfect and we offer a bag free with the Classic grill. This will burn cleanly and will produce minimal ash residue. Briquettes are not suitable for use in the Monolith as they leave a more clogging residue.

The market for Kamado ceramic grills has grown over the last few years and whilst the cost may seem prohibitive in our experience it is a wonderful way to cook and almost the only outdoor cooking device you really need. Choosing which brand is proving more and more difficult as more enter the market. All are made in China, where the traditions of using oriental ceramics are already established, so origin is not usually a distinguishable feature and build quality is usually extremely high and consistently good quality. Look instead for the package of kit you receive when you compare prices and the after sales service you are likely to receive. We think the Monolith from Hot Smoked represents a safe bet on both counts!
Delivery Information
Due to their weight and fragility, all ceramic grills are shipped by a pallet service rather than our regular courier service. We allow for the £50 shipping cost within the overall price that you pay giving you a weekday delivery which takes around 2 days. We can ship next day depending on the timing of your order, so do enquire with us if this is a service you need. We can also ship for Saturday delivery, however, there is an additional charge of £50 for this service. Again, please give us a call if you'd like this service.
Deliveries are 'kerb-side' which means the pallet can be brought by the delivery driver as close to your front door as flat-ish surfaces leading to it will allow, as it will be wheeled on a pallet truck. Once out of its crating, you will need a couple of people to help you lift the 'egg' part of the grill into place.
