These wood chunks are from managed estates in the US where the tree is indigenous and made from planked wood. Hickory is definitely one of the bbq classics and creates one of the best smoke flavours for your food which is both robust but has a mellow, sweetish edge which is not remotely bitter. The chunks are irregular in shape with virtually no bark present.
These chunks are particularly suitable for longer hot smoking projects where 'low and slow' temperatures are used, but with the range of sizes in each bag, you can choose the size that best suits your cooking project.
They are also ideal for ceramic grills when cooking at higher temperatures as they will resist igniting for longer than smaller sized chips.
There are different schools of thought on whether to soak, but our advice is to submerge in water for 15 to 20 minutes before use. This prevents fast ignition and promotes a longer, mellower smoke flavour. Packaged in cellophane bags in weights of 1kg.
