This is one of the most rewarding cold smoking projects where you can turn an average chunk of cheese into something very special! Add aromatic apple or oak flavour to hard or soft cheeses and experiment with a marigold petals coating and a Zesty sauce for serving.

The ProQ Cold Smoke Generator is the key to the smoking process and can be used in any covered barbecue, smoker or home-made smoking compartment. The generator works by filling with just 100g of a fine wood smoking dust - supplied with your kit - and lighting using the tealight supplied from an outer corner. The wood then gently smoulders and the smouldering gradually travels along the mesh maze channels of the generator, creating up to 10 hours of cooled aromatic wood smoke. All you need is enough ventilation to feed the gentle smouldering, so if you don't have a customised smoking compartment a bbq with a hood will work brilliantly.

Also use your Cold Smoke Generator for a wider range of cold smoking projects including meats, fish, nuts, salts, chillies, olive oil etc. Our Hot Smoked Recipe Booklet which is included with your kit takes you through lots of options.

The kit includes two 250g bags of fine wood dust, the perfect consistency for the cold smoke generator, giving you a flavour choice between the more robust oak smoke flavour, great for stronger flavoured cheeses and hard cheeses or the more mellow, slightly sweeter fruitwood flavour of apple, which would work well with milder cheeses such as nutty jarlsberg, brie or goats cheeses. Or create a blend with both flavours for a more complex wood smoke infusion.

You'll need just 100g of your chosen flavour to deliver 10 hours of cold smoke and you won't need quite this much smoking in every case, so you can fill with even less and plug the maze channel with some foil to get the desired length of smoking time. All our woods are 100% natural hardwoods or fruitwoods, sourced sustainably and produced specifically for food smoking.

Also included with your kit is a 10g bag of natural marigold petals. These can be used to create a coating for your smoked cheeses or mix with a little oil to make a flavour layer. Serve with the tangy Simply the Zest Sauce by Quiet Waters which is produced using only natural ingredients and without additives or preservatives.

The ProQ Cold Smoke Generator is made of stainless steel and measures 15cm square and 4cm in height. It can be washed in the dishwasher or rub the mesh gently with a soft brush to remove any residues.
