The Original Bradley Smoker has had a makeover. This best selling electric smoker, now with a distinctive smokey design on the front, has some subtle new additions and features, which will make it an even more indispensable smoking tool for home cooking and professional chefs.

The New Bradley Original Smoker is designed to take the guess work out of food smoking. It comprises an insulated 'oven' area and a smoke generator unit - you select the oven temperature according to the project in hand to a maximum of 160 degrees Celsius and the smoke generator automates the smoke production process. The full kit also includes 4 chrome plated cooking racks and a recipe booklet as well as a comprehensive user guide.

As with the rest of the Bradley range of food smokers, it is incredibly easy to use - just plug into the mains and you are ready to smoke. The unit offers the flexibility of low cold smoking temperatures* as well as hot smoking, barbecuing and slow roasting. It's key advantage over other smokers on the market is its ability to create clean and consistent smoked results with fully controllable temperature.The thermostat, previously on the base of the oven unit has now been incorporated into the smoke generator controls. Other upgrades include a new rack support design which stops these tipping over when pulled out, a removable side panel on the smoke generator for easier cleaning and extra large front feet for increased stability.

Flavoured wood bisquettes are fed into the offset smoke generator - which is attached to the side of the unit to maximize the cooking space inside and allow for a cold smoking configuration. The bisquettes, pre-formed from 100% natural compressed wood, are burned in the generator for 20 minutes each, creating even and continuous smoke generation and preventing temperature fluctuation. This process is fully automated, so once the bisquette feeder is loaded and the unit started up, the first bisquette is moved onto a metal hot plate at the base of the unit where it smoulders for its allotted 20 minutes before being pushed into the stainless steel bowl, filled with water, where it is fully extinguished. The unit will operate unattended for up to 8 hours, making the Bradley range one of the least labour intensive smoking techniques.

The internal 500 watt heater will reach a maximum temperature of 160 degrees C and as this is controlled independently from the smoke generator with its bisquette feed, it can hot or cold smoke (by removing the smoke generator, see below), or dispensing with the wood bisquettes can simply be used as a slow cooker or slow roasting oven. The low temperature cooking environment is perfect for any type of food smoking which relies, for its depth of taste, on slow cooking. The infra red heater source is also particularly suited for drying fruits. Customers have also successfully smoked garlic, chilli peppers and pineapples, amongst other things. The limits are really only in your imagination.

The size of a small fridge and light enough to carry, the Bradley Original weighs only around 18kg including the smoke generator. Best used in a garage or well-ventilated outbuilding, the Bradley can also be adapted for use in utility areas by piping the smoke released from it's top vent outside. This can be achieved either by use of plastic piping or a domestic extractor hood.

To cold smoke you need to offset the heat produced from the bisquette hot plate and pipe the smoke 1 to 2 m to ensure only cold smoke enters the chamber. You can do this by purchasing the custom designed Bradley Cold Smoking Adaptor (£82) or by creating your own 'home-made' adaptation using tumble drier hose and a protective box for the smoke generator. Alternatively, try the ProQ Cold Smoke Generator (£34), a fantastic cost-effective and efficient cold smoke producer using wood dust rather than bisquettes. Please note, the cabinet will be affected by ambient temperatures, so care needs to be taken when siting your smoker.

Bradley Bisquettes are available in 11 flavours and produce smoke from natural and pure hardwoods and fruitwoods. The bisquettes have soil assocation approval.
