A professional cure mix containing 1.2% of curing agents sodium nitrite and potassium nitrate - two compounds which are found in most cured foods and which effectively deal with bacterial content and promote the pinkness of meat. This fine salt mix is readily absorbed and is ideal for larger cuts of meat. Natural coarse sea salt, hand harvested and sun dried, sourced from Israel. These large crystals have a deep and effective curing action. Use with meat and fish cuts Soft Brown Sugar - mix at a rate of 10% or more, according to taste, to your total cure mix. Sugar is also an effective preservative, but will also impart a caramel flavour and when used in larger quantities with fish for example, will create a softer texture. Meat Spice Mix 50g - A strong, fruity combination of black peppercorns, rosemary and dried elderberries. LIghtly crush and blend with your salt and sugar cure mix for extra spicy flavours. Fish Spice Mix 50g - An aromatic combination of dill, coriander and star anise ideal for any fish curing. Lightly crush spices and add to your salt and sugar cure mix. Salts and sugar supplied in grip seal natural pouches, spices supplied in cellophane packs.
